I’m very new to this community but find this very enjoyable and the amount of work put into the maps are incredible. But I have no idea how to name cities. If anyone can help it would be very appreciated

In iD and Potlatch, create a new node and search the menu for “city”. Then, select the tag and you should be able to change the name via a text box on the left.
In JOSM (which you should definitely start using), create a new node via the Add Nodes tool, then either Presets > Geography > Places > City or add the tags manually via the Tags/Memberships box:
