How can I get a grey map (one of these used to show the location of countries, just like in Wikipedia)?
Can I actually edit the topo map and make it look like a real topo map?

I can’t address the grey map question - that’s for experts in image-editing tools. Some people are quite proficient at that.

However, I have worked a great deal on contours. There is a fairly complete explanation I wrote last year in my sandbox:
